Is minute rice (het merk dus) hetzelfde als snel kook rijst?
No no no !!!! Sorry Craig, you and I are usually on the same page, but not here. Uncle Ben's is in no way like Minute Rice. Uncle Ben's is softer than regular rice but only a little. In fact Uncle Bens is cooked only enough to soften it up so that it will absorb the oils they add. and to reduce the starch. Yes there is added oil. This makes Uncle Bens much easier to cook properly and why it is called "converted" but it makes it much worse to use on your grinder than even Regular. Don't get me wrong I was a pro chef for years and we swore by UB's, just not for our Mazzers. For those we kept a big box of Minute Rice that lasted about a year.
Minute Rice, on the other hand is an entirely different and completely unnatural animal. It is rice that is fully cooked, then dried, then ground into a paste, then formed into rice shaped nuggets then oven baked and THEN freeze dried to remove any vestige of water or oil. This is why minute rice cooks in a minute. It almost instantly sucks up the water necessary to rehydrate.
